Food Safety 101 Ten tips from a caterer
Keeping food safe is not difficult! In principle, food safety is about common sense and a little food safety education. It is strongly recommended that everyone who is involved in the preparation of meals, a little homework, how to get food.
Visit a few of the food safety Web sites. If you have any questions … Ask! Not always afraid to ask questions! Most of the food security sites should have toll-free hotlines.
The following list is not an exhaustive list. However, this list includes 10 of the most common tips that I, together with my colleagues in the preparation of meals, when I was in the catering and special event.
1st Secure your hair. Tie it back. Cover it or spray it with plenty of hair spray before you step into the kitchen. Make sure that you have no hair on your clothes, too! Use a lint brush before you go into the kitchen to cook. While loose hair is not necessarily a major problem of food security, it is very unappetizing food!
2nd Remove any rings and other jewelry from your hands. Wash your hands and arms with warm, soapy water before, during and after cooking. During the preparation of meals you have to wash your hands frequently. Just use common sense and remember that between the tasks to wash when you cough, even if you scratch, etc.
3rd The beginning of each new session with an immaculate kitchen. Wash your prep area and counter tops. Use a solution of 1 quart water to 3 teaspoon of bleach. (Bleach in a kitchen can ruin nice clothes quickly. Do not wear your best clothes in the kitchen! Nothing is worse than the search for tiny points bleached or splotches of white on a popular garment nonwhite. Believe me: I have more time I would like to happen to remember.)
4th Keep a supply of disposable food-service gloves in his hand. The choice to wear gloves is up to you. If your hands spotless, you will not need to wear gloves, unless you wish to do so. However, if you have any cuts or wounds in your hands and arms exposed - it’s very important that the wounds bandaged right. If the wound is in your hand, you must wear a glove on the hand. There is nothing more than disgusting search for a Band-Aid in food. Yuk .. You really do not want to give new meaning to the term “cuts”!
5th If you’re cooking with raw meat, fish or poultry is the raw food on the bottom shelf of the refrigerator. Do you know the reasons for this? The reason is that you do not want that all raw juices to drip on other foods accidentally in the refrigerator.
6th The temperature of your refrigerator should always be below 40 degrees. Keep a thermometer in it and monitored. If the refrigerator at your wedding reception venue … check the temperature. Make sure that the refrigerators are working properly. Ask the venue staff at the reception site to the temperature of the refrigerator for you in the days before the reception. The question, the venue staff, very nice if they will ensure that clean the refrigerator for you.
7th Verderblicher food must remain under refrigeration! Only the food from the fridge, you need in the various stages of preparation. Once you have finished the preparation BENEFIT back in the refrigerator or freezer.
8th Wash, rinse, sanitize, rinse and cutting boards steps. Use common sense!
9th Food is insulated cooler. Borrow or rent large cooler.
10th Food wastes should never be kept far away that it’s cooling systems for more than two hours. When in doubt, throw it out.
Again, this is not an all inclusive list. Depending on the menu for your reception, several precautions must be taken. How do you decide your menu, think about food safety logistics. For example, if you have a reception outdoors during the warm weather months you have to read up on the food security for picnics or tailgate parties. Follow these safety measures exactly! The amount of time that food can go unrefrigerated outside the home, is only about an hour. After that hour, when the food is not chilled or frozen down … dangerous bacteria can start growing in the food industry. This is bad! If food was not properly consumed chilled, it is possible that the person eating the food can be very, very sick. A person with a weakened immune system could even die.
